Recipe: Spinach & Mushroom Casserole

Now, I know how skeptical you all can be about tofu. I understand that skepticism. But I really mean it when I say that this is a delicious recipe.

Spinach & Mushroom Caserole Recipe

1 container of garlic onion flavored tofu, well chopped
1 bag of spinach, destemmed and torn and rinsed off
1 container of mushroom, well chopped
1/2 package of stuffing mix
1 can of cream of mushroom healthy request
1 tsp minced garlic
2 tbs olive oil
1/2 tsp thyme
dash of cayenne pepper
dash of black pepper

In a saute pan, heat 1 tbs of olive oil and 1/s tsp of minced garlic. Stir and cover until slightly wilted. About a minute. Remove and add in a big bowl. Reheat the rest of olive oil and garlic and sautee the mushroom about 2 mins. Add to large bowl.

Add the rest of the ingredients and mix very well in a large bowl. Spread into glass casserole dish. Bake in oven at 375 for 45 minutes or until top is crispy brown. Let cool, serve and enjoy. You can barely taste the tofu. I swear.
