Whole Wheat Coconut Chocolate Chip Muffins
1 package of Hodgson Mill whole wheat muffin mix
1 cup of milk
1 tbs olive oil (yes, olive)
1/2 cup shredded coconut
1 cup mini semisweet chocolate chips
Mix in a bowl. Fill muffin tins half way with mixture. Bake at 405 degrees for 30-35 minutes. (Test after 20 by sticking toothpick in. If it comes out wet, let it go back in for the full 30/35 minutes. Let cool completely before eating. Yields 10-12 small muffins.
