Super Quick Alfredo Broccoli and Ground "Meat" Recipe

Recipe: Super Quick Alfredo Broccoli and Ground "meat"
Ingredients:

1 package Knorr Alfredo Broccoli Pasta sides
1 1/2 cup water
2 tbs fat free sour cream
1/3 cup shredded cheese (any kind you like or is handy or on sale)

1 package Green Giant Simply Steam Broccoli and Carrots in garlic sauce

1 cup ground "meat" (chicken, beef, turkey, soy product)
garlic to taste
onion to taste
2 tbs olive oil

Salt and pepper to taste (be aware that Knorr & Green Giant have sodium in them already)

Directions:

In a medium sauce pan bring water to boil. Steam vegetables 3 minutes in microwave. Chop meat, garlic and/or onion. In frying pan, heat pan until hot, add oil, then when oil is hot, add garlic and onion, heat for a minute, then add meat/soy. Saute until cooked over miedium-high to medium heat, stirring occasionally, then set aside. Meanwhile, when water comes to rolling boil, add contents of package. Do not add butter or milk as directed. It's not necessary. Cook noodle over medium heat as directed for 8 minutes covered. Once noodles are cooked, add frozen vegetables, sour cream, cheese, and ground protein. Stir all ingredients well and cover. Let sit on lowest heat for about five minutes, stirring occasionally. Serve and eat. For quick sides, try plain apple sauce (no sugar), sliced cucumbers or bagged leafy greens as salad.

Note: This isn't the healthiest thing in the world, nor is it the worst thing you could eat. There are preservatives in the prepackaged food, but for a meal that takes about 15 minutes to prepare, this is pretty good. Instead of using whole milk and butter, I used fat free sour cream and a little extra cheese. I amped up the vegetable content by adding frozen veggies and I used vegetarian ground soy "meat". If you wanted, you could replace the Knorr with Annie's alfredo or whole grain and replace the Green Giant with organic frozen broccoli or veg medley and add some seasoning like veg boullion powder, garlic, parsley, basil, and/or paprika and follow the same steps. It's just that Knorr was on sale for a dollar as was Green Giant, so I took advantage!
