It's autumn! Time for soups in the crock pot! I put some mized frozen veg, can of chopped tomato, lots of spices, evoo, veg broth, brown rice and red lentils in the crock pot for a few hours. Once the lentils were tender, I turned off the pot, added chopped fresh herbs and covered for about 20 minutes then served with salt and peppe and a sprinkle of parmesan. Super easy! And tasty!
